I've not done iOS development as yet, but
1) Yes you currently still need a Mac
2) On iOS the database of choice is SQLite
3) I don't think the Indy components work on iOS as yet
4 / 5) no idea.

Currently it looks really hard to produce an iOS app from Delphi - I'm 
hoping the situation will improve with XE3.  Embarcadero have been 
making progress in this area - the latest being mobile data connectors 
for DataSnap that work with Free Pascal on iOS (which is how Delphi apps 
get compiled in XCode).

At this stage you are probably best using XCode or something like PhoneGap.
